When it comes to an arugula salad recipe, this combination of smoked salmon, avocado and arugula is one of my favorites. It’s light yet filling and simple yet impressive.

Simple salads that are pleasing to the eyes and the palate are always winners. If you’re like me, you don’t want to fuss too much with extravagant salads, especially during the summer. And sometimes you want a hearty protein on your salad but don’t want to cook.

If that sounds like you, let me introduce you to my smoked salmon, avocado and arugula salad. A salad that takes less 5 minutes to make yet looks like it took 30 minutes.

The Perfect Arugula Salad Recipe Combination

Arugula is “peppery” green that some might consider bitter or spicy. I personally love arugula and use it nearly as often in salads as I do baby spinach (my number one salad green).

But if you’re one of those who’s on the fence with the flavor of arugula make sure to buy baby arugula. Baby arugula has a milder flavor than it’s full-sized counterpart.

The wonderful thing about arugula though is that it can be paired with a wide variety of ingredients, ranging from sweet to strong flavors. It can hold it’s own in a salad or play well with others.

Today’s salad recipe is an example of that, where the arugula is combined with salty and smoky salmon, creamy avocado, sweet red onion and a vibrant champagne vinaigrette. It’s an unbelievably simple, yet delicious flavor combination.

How to Make this Smoked Salmon, Avocado and Arugula Salad

To make this salad recipe make sure you have fresh arugula. Fresh arugula always has a brighter flavor. You can choose full-sized arugula, though I’m using baby arugula today.

Add four cups of arugula to a mixing bowl along with one cup of microgreens. I’m using kale microgreens, but again, any microgreens will do.

Next, add small, bite-sized pieces of smoked salmon. Many packages of smoked salmon come pre-sliced which makes it easier to tear, so looked for pre-sliced on the package. But most importantly, look for wild Alaskan smoked salmon. On a salad as simple as this, quality is key. And I’ve talked about the importance of quality when it comes to salmon on my Dijon Baked Salmon recipe.

To that, add sliced avocado, sliced pear and sliced red onion. Then, drizzle my Champagne Vinaigrette on top and gently mix it all together.

Ingredients

  • 4 cups arugula
  • 1 cup microgreens
  • 6 ounces smoked salmon, torn into pieces
  • 1 1/2 avocado, sliced
  • 1 pear, sliced
  • 1/2 red onion, thinly sliced
  • salt and pepper
  • Champagne Vinaigrette

Instructions 

  • Add all of the ingredients to a bowl and drizzle with the Champagne Vinaigrette. Gently toss together and serve immediately.

    I also added in some capers and because I was being lazy just threw on some balsamic vinegar instead of the champagne vinaigrette.5 stars

  9. Hello Lisa, I really love this recipe! I have a question, are the measurements in the recipe correct? If I look at the recipe for 1 person it says 6 ounces of salmon and 1,5 avocado. Is this correct? Thank you so much for sharing your recipes and information. Annemiek

  12. Delicious! Made it during a winter storm when we were snowed in and needed to use what we had on hand. Replaced the pear with half an Asian pear, replaced the micro greens with mixed field greens, only used one avocado, and since the half a red onion that we had needed to go to the vinaigrette, the onions were replaced with spruce tip pickled red onion. I topped it off with a handful of hemps seeds.5 stars
