Hollandaise sauce is a classic creamy sauce thatโs perfect for breakfast or brunch! This recipe is easy and no-fail. It takes just 5 minutes in a blender. Drizzle it on top of poached eggs, eggs Benedict, vegetables or several other recipes for a delicious finishing touch.
If youโve had eggs Benedict before, youโve probably encountered this rich and buttery sauce. Itโs got the creamiest consistency and its flavors meld beautifully with ingredients such as eggs, asparagus, or salmon.
While this sauce may seem a bit on the fancy side, itโs actually very easy to make! But like many other emulsions, the fear that it will separate or not come together can be a bit nerve wracking. So today, Iโll walk you through the step by step on how to make perfect homemade hollandaise sauce.
How To Make Hollandaise Sauce
To make this recipe, simply heat up some butter (and it needs to be hot!) and stream it into the blended egg yolk mixture to create a velvety smooth sauce.
- Melt the butter in a microwave for about 1 minute until hot.
- Combine the egg yolks, lemon juice, dijon, salt and cayenne pepper into a high powered blender and blend for 5 seconds.
- Slowly stream in the hot butter into the mixture as the blender is running.
- Pour the sauce into a small bowl and drizzle over your meal!
Hollandaise Sauce Ingredients
All youโll need for this sauce are six ingredients. And you probably have them in your fridge and pantry already.
- Egg Yolks โ 3 eggs
- Lemon Juice โ 1 tablespoon
- Dijon โ 1 teaspoon
- Salt โ 1/4 teaspoon
- Cayenne Pepper โ just a pinch
- Butter- 1/2 cup of melted butter
How To Fix Broken Hollandaise Sauce
The key to getting the consistency right all comes down to the hot melted butter. This recipe emulsifies butter into an egg yolk and lemon juice mixture. So you want to make sure youโre streaming in butter thatโs hot enough (just melted wonโt do).
But in the case that your sauce does break and becomes a speckled mess, donโt fret. Below are two methods to try that will help bring your sauce back to life.
- Blend 1-2 tablespoons of boiling hot water: As youโre blending, slowly add in the hot water and blend until the consistency is right.
- Add an extra egg yolk: While the blender is on, add an extra egg yolk with a teaspoon of hot water into the blender and blend until it becomes perfectly creamy.
Can You Use an Immersion Blender?
Yes, absolutely! If you have an immersion blender, add all of the ingredients except the hot butter. Turn the blender on (with it firmly planted on the bottom of the cup or jar) and slowly drizzle in the butter. It will start to emulsify and once youโve poured in all the butter youโre done!
How To Store And Reheat Hollandaise Sauce
While this sauce is best served fresh, you do have the option of reheating it. But keep in mind that there could be a chance where your eggs will cook up a bit. So here are two options for reheating โ just be cautious!
- Microwave: Place the hollandaise sauce in a glass bowl, and microwave it in 15 second increments. Repeat this process until your sauce is fully warmed up.
- Stove Top: Pour the hollandaise sauce into a pan over low heat. Add in a smidge of melted butter and water to re-emulsify and give it a smooth texture. Once itโs warmed up, pour the sauce back into a serving bowl.

Ingredients
- 3 egg yolks
- 1 tablespoon lemon juice , or more as desired for flavor
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- pinch of cayenne pepper
- 1/2 cup unsalted butter or ghee, or more for a thinner consistency, melted and hot
Instructions
- Melt the butter in a microwave (make sure it's covered as it will splatter) for about 1 minute, until it's hot. Alternatively, you could heat it on the stove.
- Add the egg yolks, lemon juice, dijon, salt and cayenne pepper into a high powered blender and blend for 5 seconds until combined.
- With the blender running on medium high, slowly stream in the hot butter into the mixture until it's emulsified.
- Pour the hollandaise sauce into a small bowl and serve while warm.
Lisa's Tips
- I mention this above, but just to reiterate... your butter needs to be hot, not just melted. The recipe will not emulsify with luke warm butter.
- If you'd like more sauce, just add another yolk and up to another 1/2 cup of melted butter.

Such an easy recipe and so amazing! I added about 1/2 tablespoon more of lemon juice and used stone ground mustard since I didnโt have Dijon on hand. It was tart and just wonderful!

It came together nicely, but mostly tasted like mustard. Iโll either reduce or leave out the dijon next time. I halfed the lemon juice based on other reviews and felt it was enough.
This recipie is not bad, tastes quite good but consistency was too watery for me and my family. We still really enjoyed it though. Cook time is really 5 mins!!

I made my first ever Hollondaise today! Wow! I doubted it would work but trusted the process and just like that it was done. It was so easy and worked perfectly.
I gave this recipe 4 stars only for the lemon juice quantity, I felt like 1 tbsp was a lot, but tried it for the first time in case. If I make this in the future I think for my family I would half the lemon juice amount. For us it was overpoweringly sour on our Eggs Benedict and not so complimentary. If the dish you are making your hollandaise with would pair well with lemon I think it would be fine as is. ๐

i had slightly over whipped it (manual old school hand blender), and it went a bit grainy, but that was my fault. i shoulda stopped when it started thickening like custard. and i will stop on time next time i make it.

I made this a few times and everyone LOVED it. Then.. A few times the sauce just didnโt thickenโฆ my butter was super hot but maybe it separated in the microwave? or maybe other times it wasnโt hot enough?? Finally i tried it again but this time let me eggs go to room temperature first and it worked again!!! (Phew)

This recipe is so easy and was a big hit. This is my new go to hollandaise sauce recipe. No fuss, just very simple and just as good as others Iโve made in the past! The only thing I will mention is, make it as the very last thing bc if it cools too much it gets lumpy. I have everything in the blender and ready to go and the butter melting when I dish up. Then I add the jot butter. Works perfectly.

This recipe is perfect. I will certainly be making this a million times. I made this for asparagus I prepared last weekend for my mother-in-law. I love it. And, it saves well. I saved it in a glass Pyrex and warmed it up in a hot water bath. Five Stars!

Made eggs Benedict. Perfect! Didnโt add Dijon because a family hates the flavor but it was rich and creamy. I would even go more lemon but thatโs just our preference. I used Danish creamery butter which I think makes it better. I also added the leftover egg whites to the poached eggs- a comment mentioned that, and it was genius!

I made this a few months ago and it was fabulous. Iโm currently pregnant and would like to enjoy it again, but am a little hesitant about the eggs. Could I gentle heat the finished sauce in a sauce pan while stirring to cook the eggs a bit more? Or would that cause it to become too thick?
Place in a bowl and put the bowl in the pan of water to create a bain-marie. Cook over low heat, stirring gently, until the mixture reaches 160ยฐF. If it becomes thicker than you desire add in a teaspoon of water, whisking constantly till desire texture is reached.

It needs a little less lemon juice. Also I added about a Tbsp of hot water to thin a bit. Additionally, if using salted butter omit salt.
I just made this. Was out of Dijon so I mixed a little ground mustard with a little mayo and sour cream. The sauce was incredible and fool proof!!!
My mistake was I made it before I even started my eggs so it thickened a little but the heat from the eggs thinned it a little when I put on my dish.
Advice for the leftover sauce and how to safely โthin?โ Low heat in sauce pan? Gentle to not break? Iโm a total novice but understand sometimes itโs all in being patient and having the right timing. ๐

Iโve never made hollandaise before โ I was intimidated. Iโm just a lowly home cook from Tennessee. But this recipe made it approachable. I donโt like cayenne, so I used tajin instead. My blender is on the fritz, so I set my kitchen aid blender to medium and blended everything longer until the sauce looked good. Poured this over my and Benedicts and my husband ate it like a starving animal! He made many โyummyโ noises. ๐

Fabulous recipe! Iโve been missing my Eggs Benedict since I became sensitive to dairy. But I made this with margarine and it turned out so beautifully! The immersion blender tip to press it firmly to the bottom of the bowl while you pour in the hot butter (margarine) was very helpful, too.

Amazing! Super easy in the microwave, I grew up making it on the stove top as a line cook, and this is oh so much easier and it came out absolutely perfect!! I use the white mouth canning jar, and a hand blender.. absolute perfection!

This recipe didnโt work out for me. I tried 2x . I had to use a blender cup because there wasnโt enough liquid to reach the blades in my blender. This first time I thought okay I didnโt warm the butter hot enough, so I tried again with the butter almost boiling. Still didnโt emulsify and came out super watery and separated again. Although it didnโt work out for me and I wonโt try again (6 eggs and 2 sticks of butter down the drain) the recipe was delicious tasting.
Hi Adrianna โ it sounds like your blender cup might be the culprit here. Those often arenโt powerful enough to properly emulsify ingredients.
